Quinoa Pizza

Makes 8 Inch Pizza Base

 

Ingredients

  • 200g quinoa (allow 8 hours for soaking)

  • 1 tsp oregano, dried

  • 1 tsp mixed herbs, dried

  • salt

Topping Ideas

  • 2 tbsp tomato puree

  • mozzarella, shredded

  • cherry tomatoes, halved

  • handful of artichokes

  • handful of pitted black olives

  • handful of rocket

  • chopped peppers

  • handful of basil leaves

Method

  1. Soak the quinoa in a large bowl with water overnight or for about eight hours in water.

  2. Pre-heat the oven to 190C.

  3. Drain the quinoa and transfer it to a blender, add herbs and salt.

  4. Blend for a few mins until a smooth dough forms. It should look a bit like pancake mix. You may need to add a splash of water.

  5. Line the bottom of a pizza dish or cake pan with olive oil and pour the mix in.

  6. Bake for about 15—20 mins, until the base is firm, add toppings and return to oven for a few mins more.
