Quinoa Pizza
Makes 8 Inch Pizza Base
Ingredients
200g quinoa (allow 8 hours for soaking)
1 tsp oregano, dried
1 tsp mixed herbs, dried
salt
Topping Ideas
2 tbsp tomato puree
mozzarella, shredded
cherry tomatoes, halved
handful of artichokes
handful of pitted black olives
handful of rocket
chopped peppers
handful of basil leaves
Method
Soak the quinoa in a large bowl with water overnight or for about eight hours in water.
Pre-heat the oven to 190C.
Drain the quinoa and transfer it to a blender, add herbs and salt.
Blend for a few mins until a smooth dough forms. It should look a bit like pancake mix. You may need to add a splash of water.
Line the bottom of a pizza dish or cake pan with olive oil and pour the mix in.
Bake for about 15—20 mins, until the base is firm, add toppings and return to oven for a few mins more.
