Courgette Fritters

Serves: 2 (Makes 6 fritters)

 

Ingredients

  • 1 Large courgette or 2 small

  • 1 Clove of garlic, peeled and minced

  • Large bunch fresh basil, chopped

  • Large bunch fresh oregano or tsp dried

  • 1 tbsp Lemon zest

  • 2 organic eggs

  • 1⁄4 cup gluten free flour

  • 1⁄4 tsp onion powder

  • Salt/pepper to taste

  • 2 tbsp Coconut oil

Method

1.Using the large holes of a box grater, grate the courgette.
2.Place courgette in a colander set in the sink and toss with 1/2 teaspoon salt. Let stand 10 minutes, then wring courgette dry in a clean kitchen towel.
3.Place courgette in a large bowl and gently mix in egg, garlic, basil, oregano, lemon zest, onion powder, salt and pepper. Mix well to combine.
4.Slowly add flour, stirring so no lumps form.
5.Heat 2 tablespoons coconut oil in a large pan over medium-high heat until the oil sizzles.
6.Carefully drop about 2 tablespoons courgette mixture into pan; repeat, spacing fritters a few inches apart. Cook fritters until golden, 2—3 minutes each side. Transfer fritters to a plate; set aside in a warm place. Cook the remaining courgette mixture, adding more oil to the pan if necessary.
